Keto French pancakes for Breakfast
Ingredients
- 8 large eggs
- 2 cups heavy whipping cream
- ½ cup water
- ¼ tsp salt
- 2 tbsp ground psyllium husk powder
- 1 oz. butter
Instructions
- In a bowl, mix together eggs, cream, water and salt with a hand mixer.
- Gradually whisk in the psyllium husk while you continue mixing until you get a smooth batter. Let rest for at least 10 minutes.
- Fry in butter just like regular pancakes. You should count with ½ cup (1 dl) batter per pancake. Make sure your frying pan is neither too big nor too hot, keep it on medium-high heat. Don’t be impatient, wait until the top is almost dry before flipping.
Tip!
Start with frying a small pancake to determine if the batter holds together properly. There is a difference between different brands of psyllium husk and even the size of the eggs can affect the end result. Dilute the batter with some cream, milk or water if it gets too thick. Add more psyllium husk if it’s too thin. You can serve the pancakes with whipped cream and/or berries of your choice.

- 1½ lbs ground beef or ground turkey
- 1 tbsp butter
- 3 tbsp Tex-Mex seasoning
- 1 cup (9 oz.) crushed tomatoes
- 2 oz. pickled jalapeños
- 2 cups (8 oz.) cheddar cheese, shredded
For serving
- ¾ cup sour cream or crème fraîche
- 1 (½ oz.) scallion, finely chopped
- 5 oz. (2½ cups) leafy greens or iceberg lettuce
- 1 cup guacamole (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Fry the ground beef in butter over medium high heat until cooked through and no longer pink.
- Add Tex-Mex seasoning and crushed tomatoes. Stir and let simmer for 5 minutes. Taste to see if it needs additional salt and pepper.
- Place the ground beef mixture in a greased baking dish (about 9″ or 23 cm in diameter). Top with jalapeños and cheese.
- Bake on upper rack in oven for 15–20 minutes or until golden brown on top.
- Mix the scallion with the crème fraîche or sour cream in a separate bowl.
- Serve the casserole warm with a dollop of the crème fraîche or sour cream, guacamole and a green salad.

Keto Pizza for Dinner
Ingredients
Crust
- 4 eggs
- 1½ cups (6 oz.) shredded mozzarella cheese
Topping
- 3 tbsp unsweetened tomato sauce
- 1 tsp dried oregano
- 1¼ cups (6 oz.) shredded provolone cheese
- 1½ oz. pepperoni
- olives (optional)
For serving
- 2 oz. (1 cup) leafy greens
- ¼ cup olive oil
- salt and ground black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Start by making the crust. Crack eggs into a medium-sized bowl and add shredded cheese. Give it a good stir to combine.
- Use a spatula to spread the cheese and egg batter on a baking sheet lined with parchment paper. You can form two round circles or just make one large rectangular pizza. Bake in the oven for 15 minutes until the pizza crust turns golden. Remove and let cool for a minute or two.
- Increase the oven temperature to 450°F (225°C).
- Spread tomato sauce on the crust and sprinkle oregano on top. Top with cheese and place the pepperoni and olives on top.
- Bake for another 5-10 minutes or until the pizza has turned a golden brown color.
- Serve with a fresh salad on the side.
